This is definitely my FAVOURITE muffin recipe! It is my favorite snack to make in bulk and store in the freezer. This quick nutritious snack is great to grab on a busy day! These Banana Tofu muffins are filled with fibre, protein and even essential omega-3 fatty acids. Could it get any sweeter than this?
I know what you are thinking- tofu in a dessert? That does not sound sweet.
But WAIT. I want to share a little story with you and express why dessert tofu is a great addition to your favourite desserts.
When I was studying about the importance of protein at Mount Royal University my professor asked the class “who in this room likes tofu?” Not surprisingly, only a few raised their hand.
I didn’t. I knew I already had a perception that tofu was gross without even needing to try it.
I think my professor knew this was a common perception. “I want to show you that tofu can taste good and will taste good when you cook it properly. I am going to hand out some muffins that have tofu in them and I want you to then tell me honestly if you still don’t like tofu.”
I couldn’t lie. They were SO delicious. And they are the muffins I share with you today (with some personal tweaks over the years).
Ok, so it tastes good, but why do I love tofu so much? Let me reveal the magic!
Tofu is a great protein source. Protein is essential for maintaining body functioning. It not only helps build essential hormones and enzymes, but is a key component in cell growth and repair. Overall, protein is an important energy source that our body uses for a variety of functions.
Unlike many other plant-based proteins, tofu is a complete protein! Yes yes, I KNOW the myth about ‘complete proteins’ were debunked – but still – getting all the essential amino acids (the building blocks that make up proteins) that our body needs in a plant based food like tofu is still awesome, nonetheless. Finding ways to add tofu into our favorite foods provides us with a way to fuel our body with those essential amino acids!
Lastly, dessert tofu not only adds protein to treats, but also helps maintain a moist final product!

Banana Tofu Muffins
Ingredients
- 1 cup whole wheat-flour
- ½ cup ground flax seed
- ¼ cup wheat germ
- 1 tsp baking powder
- 1 tsp baking soda
- 150 grams package of plain dessert tofu
- ¼ cup soft butter
- 3 ripe bananas mashed
- ¾ cup chocolate chips
Instructions
- Preheat oven to 375F
- In a large bowl, blend all dry ingredients together.
- In a medium bowl, mash bananas.
- Add butter and dessert tofu to the medium bowl.
- Pour liquid ingredients into the dry ingredients and stir until moistened.
- Lightly mix in chocolate chips.
- Fill muffin tins half full and bake for 20-25 minutes.

What is dessert tofu?
It’s a softer version of silken tofu – but if you can’t find it – silken tofu can be used!
