Banana Tofu Muffins

Ingredients

  • 1 cup whole wheat-flour
  • ½ cup ground flax seed
  • ¼ cup wheat germ
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 150 grams package of plain dessert tofu
  • ¼ cup soft butter
  • 3 ripe bananas mashed
  • ¾ cup chocolate chips

Instructions

  • Preheat oven to 375F
  • In a large bowl, blend all dry ingredients together.
  • In a medium bowl, mash bananas.
  • Add butter and dessert tofu to the medium bowl.
  • Pour liquid ingredients into the dry ingredients and stir until moistened.
  • Lightly mix in chocolate chips.
  • Fill muffin tins half full and bake for 20-25 minutes.
