This quick and easy lunch is high in protein, fibre, and is very easy to make ahead! Karli and I made it for the Wellness Fair for Husky and it was a HUGE hit!
Any beans can be used, however I enjoy the texture and flavour of the white beans the most.
- 1 can white kidney beans, rinsed and drained
- 1 Tbsp curry powder
- 3 Tbsp mayo
- A pinch of chili flakes
- 1 cup spinach
- 6 slices bread
- Salt to taste
- Mash 1 can beans with curry powder, mayo, chili flakes, and salt to taste.
- Divide 1/3 mixture on 3 slices bread
- top with 1/3 cup spinach
- Top with 3 slices bread
