This quick and easy lunch is high in protein, fibre, and is very easy to make ahead! Karli and I made it for the Wellness Fair for Husky and it was a HUGE hit!

Any beans can be used, however I enjoy the texture and flavour of the white beans the most.

Curried white bean salad sandwich

Ingredients

  • 1 can white kidney beans, rinsed and drained
  • 1 Tbsp curry powder
  • 3 Tbsp mayo
  • A pinch of chili flakes
  • 1 cup spinach
  • 6 slices bread
  • Salt to taste

Instructions

  • Mash 1 can beans with curry powder, mayo, chili flakes, and salt to taste.
  • Divide 1/3 mixture on 3 slices bread
  • top with 1/3 cup spinach
  • Top with 3 slices bread
  • Enjoy!
