Mediterranean Meatballs

November 13, 2015

As much as I love meatballs, its honestly the last thing I think about when I go to plan my weekly menu. That being said, after I created this super simple recipe, I found it to show up far more often – especially for lunches since this freezes SO well! I also love packing them for nights I golf after work – they’re super easy to eat on the run. I like to double the recipe and freeze the extras. It also goes great on top of greek salad, or a bed of rice!

A triangle-shaped slice of egg frittata. There is orange coloured cheese oozing out of the side and the top is a crispy golden colour. There is a green herb garnish ontop. There is a salad with lettuce, red cabbage, spinach and fresh raspberries next to it.
