Eat This: Chicken & Basil Sausage Soup

Ingredients

  • 1 pint cherry tomatoes
  • 6 chicken basil sausages
  • 4 cups vegetable or chicken broth
  • 1 can tomato paste
  • 1 can cannellini beans
  • 2 cups water
  • Garlic olive oil
  • Salt, to taste

Instructions

  • Quarter the tomatoes and place on a cookie sheet.
  • Drizzle with garlic olive oil and sprinkle with a pinch of salt.
  • Bake at 400 degrees for ~20 minutes, or until caramelized - LOOK at all that flavour!
  • Remove casings from the sausage
  • Heat a soup pot, add a bit of olive oil, and cook the chicken sausage thoroughly until cooked through.
  • Deglaze the pan with chicken broth
  • Add tomato paste, cannellini beans.
  • Simmer for 15-20 minutes
