Mediterranean Meatballs

Ingredients

ground turkey or chicken
1
lb
pork
2
eggs
Zest of 1 lemon
2
tsp
oregano
1
tsp
Italian seasoning
1
tsp
onion powder
1
Tbsp
thyme
4-6
cloves
garlic
2/3
cup
grated parmesan
2/3
– 1 cup breadcrumbs
(I used cornflake crumbs)
Salt to taste – added ~ 1/2 tsp but it can be omitted if you’re watching your salt intake!

Lemon juice
Instructions
Pre heat oven to 350 degrees
Combine all spices, cheese, and bread crumbs
Whisk two eggs into the spice mixture
Mix with meat until combined
Roll into ~ 1 inch round balls, placing onto cookie sheet lined with foil
Bake for 20-30 minutes, or until meat has reached 165 degrees
