Decadent Low FODMAP Chocolate Banana Cookies

This recipe makes a small batch of only 8 cookies - perfect for those days when you just want a little something sweet without baking for a whole army!

- ⅓ cup white sugar
- 3 tbsp butter melted
- 1 ripe banana cutting or mashing can make it easier to blend
- ¼ cup gluten free all purpose flour
- ¼ cup cocoa powder
- 1 tsp baking powder
- 3 tbsp slivered almonds or other low FODMAP nuts of choice
In a mixing bowl, use a whisk or a hand mixer to mix sugar and melted butter until fluffy and light.
Add banana (cut into chunks or mashed), cocoa powder, gluten free all purpose flour, and baking powder. Mix well using a hand mixer or spatula. The dough will be sticky like a cake batter.
Line a baking sheet with parchment powder. Preheat the oven to 350°F. Scoop about 1½ tablespoons of batter onto the lined baking sheet and repeat until all cookies have been made. Space them evenly apart, as they will expand when cooked.
Add slivered almonds to the top of each cookie.
Bake the cookies for 13 minutes. Allow them to cool before serving.
