Apple Cinnamon Pancakes

  • 1 cup milk
  • 1 egg
  • 1 Tbsp butter, melted
  • 1/2 tsp vanilla extract
  • 2/3 cup quick-cooking oats
  • 2/3 cup whole wheat flour
  • 2 Tbsp brown sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1 apple, shredded (optionally peeled - but keep in mind, the skin is loaded with nutrition!)
  • Extra butter to cook pancakes

Apple Compote

  • 2 apples, peeled and diced
  • 1 Tbsp brown sugar
  • 1 Tbsp lemon juice
  • 1 tsp cinnamon
  • 1 Tbsp butter
  • ¼ cup water


Apple filling

  • Put diced apples, brown sugar, cinnamon, butter, and water in a sauce pan.
  • Simmer on low until apples soften. You may require more water to prevent burning.


  • In a bowl mix milk, egg, melted butter and vanilla extract.
  • In a separate bowl mix oats, flour, sugar, baking powder, salt, and cinnamon.
  • Mix wet ingredients into dry ingredients, and fold in shredded apple.
  • Pour a 1/4 cup batter for each pancake onto a buttered and hot skillet or pan.
  • When the pancakes bubble, flip and cook until golden brown.
  • Serve with apple compote on top!
