In a bowl mix milk, egg, melted butter and vanilla extract.
In a separate bowl mix oats, flour, sugar, baking powder, salt, and cinnamon.
Mix wet ingredients into dry ingredients, and fold in shredded apple.
Pour a 1/4 cup batter for each pancake onto a buttered and hot skillet or pan.
When the pancakes bubble, flip and cook until golden brown.
Serve with apple compote on top!
