Low FODMAP Tomato Sauce

Ingredients
  • 1 Tbsp garlic infused olive oil
  • 2 celery stalks (not larger than 12 cm each)
  • 1 red pepper
  • 1 can (28 fl oz) unsalted purée tomatoes
  • 1 can (28 fl oz) unsalted chopped tomatoes
  • 4 bay leaves
  • 1 Tbsp oregano
  • 1.5 Tbsp dried basil
  • ¼ tsp ground pepper, or to taste
  • ½ tsp salt, or to taste
Instructions
  1. Heat olive oil on medium-high in a large saucepan.
  2. Thinly chop celery and red pepper and add to pan and cook for about 5 minutes.
  3. Pour in chopped and purée tomatoes and stir.
  4. Add in bay leaves, dried oregano, dried basil, pepper and salt and stir well.
  5. Cover, and simmer for 30 minutes.
  6. Remove bay leaves, and serve or freeze in small airtight containers.
