Healthy Chocolate Zucchini Lentil Loaf

Chocolate Zucchini Lentil Loaf

Chocolate Zucchini Lentil Loaf Hey all! I'm sure many of you know, but I'm taking part this year in Pulse Canada's Pulse Pledge! For those of you who DON'T know, it's the International Year of the Pulses! When I started participating in this amazing movement, I had an influx of questions. What's a pulse? How do you cook them? What's your favourite way to eat them? How can they help my nutrition? Well. I have all the answers for you! Check out my post talking ALL about what a pulse is HERE >>>> In the mean time, I wanted to make a fun pulse recipe. I rarely bake. Mostly because I don't like following directions. But I made this cake, and couldn't stop eating it. I think my father-in-law...

The Best Pumpkin Chia Pudding

The Best Pumpkin Chia Pudding

Pumpkin Chia Pudding For those of you that follow me on Instagram - you know that I've been cookin' up a storm in my kitchen with pumpkin! That's right - as soon as September rolled in and the leaves started to turn, I decided to whip out this delicious canned ingredient to add to my Fall cooking repertoire. I was in a dessert-y mood - however, I wanted a healthy alternative. I had initially thought maybe pumpkin muffins or an oatmeal bake, but I had a hankering for something a bit more dessert-eque. Voila! I whipped up a batch of pumpkin chia pudding. Paired with a 5% vanilla greek yogurt and it's SERIOUSLY like eating pumpkin pie filling. A perfect high fibre dessert as you watch...

Summer Green Pea Salad

Summer Green Pea Salad

I'm always looking for kitchen inspiration. When my mom shipped me home with a GIANT bag of delicious garden peas, I knew I had to create something AMAZING, and invented my Summer Green Pea Salad! Sometimes peas seem a bit well, boring. Turns out, if you steam them for 99.9% of your life, you may have that impression. But if you get a little creative, peas can be SO delicious and fun! Not to mention, packed with protein, fibre, and vitamin C! This salad goes great alongside most bbq items - especially fish, chicken, and burgers. It's great for cooking bulk and bringing to a potluck too! Your friends will be so impressed that you were super creative with peas. I'm sure of it. Summer Green Pea Salad ...

Avocado Pesto Pasta

Avocado Pesto Pasta

Avocado Pesto Pasta I like avocados. But I can't say I'm avocado-crazy. I see all these people on social media who I'm quite certain, exclusively live off of the things. While I appreciate them, I find I prefer when they're served TO me, rather than me having to figure out how I'm going to use them, and how to time it just so, so I enjoy the avocado on a day where its perfectly ripe. Cause we all know if I wait one more day, it will be mushy and full of brown spots. Last week, I was inspired to do something fantastic with an avocado. So. I bought basil, I bought an avocado, and I used all that social media inspiration to create avocado pesto pasta. And...

Med Meat Balls

Mediterranean Meatballs

As much as I love meatballs, its honestly the last thing I think about when I go to plan my weekly menu. That being said, after I created this super simple recipe, I found it to show up far more often – especially for lunches since this freezes SO well! I also love packing them for nights I golf after work – they’re super easy to eat on the run. I like to double the recipe and freeze the extras. It also goes great on top of greek salad, or a bed of rice!
