Mediterranean Meatballs

As much as I love meatballs, its honestly the last thing I think about when I go to plan my weekly menu. That being said, after I created this super simple mediterranean meatballs recipe, I found it to show up far more often – especially for lunches since this freezes SO well! I also love packing them for nights I golf after work – they’re super easy to eat on the run. I like to double the recipe and freeze the extras. It also goes great on top of greek salad, or a bed of rice!

Ingredients
  • 1 lb ground turkey or chicken
  • 1 lb pork
  • 2 eggs
  • Zest of 1 lemon
  • 2 tsp oregano
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 Tbsp thyme
  • 4-6 cloves garlic
  • ⅔ cup grated parmesan
  • ⅔ – 1 cup breadcrumbs (I used cornflake crumbs)
  • Salt (to taste – added ~ ½ tsp but it can be omitted if you’re watching your salt intake!)
  • Toppings
  • Tzatziki
  • Lemon juice
Instructions
  1. Pre heat oven to 350 degrees
  2. Combine all spices, cheese, and bread crumbs
  3. Whisk two eggs into the spice mixture
  4. Mix with meat until combined
  5. Roll into ~ 1 inch round balls, placing onto cookie sheet lined with foil
  6. Bake for 20-30 minutes, or until meat has reached 165 degrees
